Vegan Cookies

They're full of flavour and you can accessorise with your favourite toppings too!

Ingredients
- 125g Vegetable Oil
- 250g Brown Sugar
- 125ml Coconut Milk (tin)
- 1tsp vanilla essence
- 275g pain flour
- 1tsp baking powder
- 1/4 tsp bicarb of soda
- 400g dark vegan chocolate, broken into large chunks
- Various sprinkles
Method
1. Whisk together the vegetable oil and brown sugar in a large bowl until a crumbly mixture is formed.
2. Whisk in the coconut milk and vanilla essence.
3. Fold in the flour, baking powder & bicarbonate of soda.
4. Stir through 200g of the the dark chocolate chunks.
5. Chill for 30 mins
6. Form the dough into balls the size of a plum, and spread 6cm apart on a lined baking sheet and bake at 180ºC for 12 minutes.
7. Cool on the baking sheet for 15 mins before moving to a wire rack to cool completely.
8. Meanwhile melt the other 200g of dark chocolate chunks in the microwave in 20sec blasts until smooth.
9. Dunk half of each cookie in the melted chocolate and decorate with sprinkles.
10. Chill for 30 mins and enjoy!
