Recipe: Rocky Road Cheesecake

You simply NEED to make this Rocky Road Cheesecake - it's the perfect weekend treat!!
It's really easy to make and it's SO tasty you won't want to stop eating it - it'd be perfect if you're trying your own Bake Off!

Ingredients
- 200g Digestive Biscuits
- 200g Dark Chocolate
- 200g Milk Chocolate
- 100g Butter
- 3 tbsp Golden Syrup
- 100g Mini Marshmallows
- 25g Popcorn
- 500g Cream Cheese
- 600ml Double Cream
- 6 tbsp Icing Sugar
- 4 tbsp Cocoa Powder
- 2 tbsp Vanilla Essence
Method
- Melt the chocolate, syrup and butter in a bowl over hot water
- Set aside to cool slightly
- Add crushed biscuits and marshmallows and mix together
- Press into a springform and place in the fridge to set
- Whisk together cream, cheese, icing sugar, cocoa powder and vanilla
- Spoon onto rocky road base
- Refrigerate
- Decorate with extra marshmallows, biscuits, and melted chocolate
- Cut and enjoy!
