Recipe: Reese's Cheesecake

Ingredients

For the biscuit base
- 200g choc chip cookies
- 50g butter, melted
- 450ml double cream
- 100g caster sugar
- 300g cream cheese
- 2 tbsp peanut butter
- 4 tbsp condensed milk
- 2 packs Reese's Snack Mix (56g) or Reese’s Pieces
- Reese’s Peanut Butter Cups 5pk, chopped
Method
For the biscuit base:
- Crush the choc chip cookies and mix with the melted butter
- Line a cake tin with greaseproof paper and fill with the cookie base. Use a metal spoon to evenly spread the base.
- Refrigerate until you are ready to add the cheesecake
For the cheesecake cream:
- In a mixing bowl add the double cream and caster sugar. Whisk until thicker
- Add the cream cheese, condensed milk, and peanut butter. Whisk again until you have soft peaks
- Stir in the Reese’s Snack Mix
- Add the cream to the base and spread evenly. Top with chopped Reese’s Peanut Butter Cups and drizzle melted chocolate and peanut butter
- Refrigerate overnight
