Recipe: Mint Aero Cheesecake

How tasty does this Mint Aero Chocolate cheesecake look?!
It's a perfect Friday night sweet treat - and SO easy to make!
Follow the steps in our recipe and you too can enjoy this delicious, chocolatey cheesecake.

Base
- 200g Oreos
- 50g Caster Sugar
- 50g Butter
- 200ml Double Cream
- 50g Caster Sugar
- 280g Cream Cheese (Philadelphia)
- 250g Mascarpone Cheese
- 1 tsp Vanilla Extract
- 4 tbsp Condensed Milk
- 2 Large Mint Aero Bars
Method
- Line a baking tray with baking paper and tip the crushed biscuits and sugar into a large bowl
- Pour in the butter and mix together well
- Pour the mixture into the lined tin and push down with the back of a metal spoon until you have a flat surface. Place in the fridge to chill
- Using an electric whisk, lightly whip the double cream and caster sugar until the mixture has doubled in volume. In a separate bowl, using an electric whisk, mix the cream cheese, mascarpone, vanilla extract and condensed milk together. Fold the whipped double cream into the cheese mixture
- Fold in roughly ¾ of the grated Aero bars
- Spoon the mixture onto the chilled cheesecake base. Flatten again with the back of a spoon or a small palette knife
- Drizzle melted chocolate onto the top of the cheesecake and use a toothpick to swirl it around
- Top with Aero Balls and grated Aero
- Chill the cheesecake for at least 2 hours
- Carefully remove the cheesecake from the tin, and remove the baking paper
- To serve, slice with a sharp knife, dipped in hot water to ensure a smooth edge
