Recipe: Mint Aero Cheesecake

Ingredients

    Base
  • 200g Oreos
  • 50g Caster Sugar
  • 50g Butter
Cheesecake
  • 200ml Double Cream
  • 50g Caster Sugar
  • 280g Cream Cheese (Philadelphia)
  • 250g Mascarpone Cheese
  • 1 tsp Vanilla Extract
  • 4 tbsp Condensed Milk
  • 2 Large Mint Aero Bars

Method

  1. Line a baking tray with baking paper and tip the crushed biscuits and sugar into a large bowl
  2. Pour in the butter and mix together well
  3. Pour the mixture into the lined tin and push down with the back of a metal spoon until you have a flat surface. Place in the fridge to chill
  4. Using an electric whisk, lightly whip the double cream and caster sugar until the mixture has doubled in volume. In a separate bowl, using an electric whisk, mix the cream cheese, mascarpone, vanilla extract and condensed milk together. Fold the whipped double cream into the cheese mixture
  5. Fold in roughly ¾ of the grated Aero bars
  6. Spoon the mixture onto the chilled cheesecake base. Flatten again with the back of a spoon or a small palette knife
  7. Drizzle melted chocolate onto the top of the cheesecake and use a toothpick to swirl it around
  8. Top with Aero Balls and grated Aero
  9. Chill the cheesecake for at least 2 hours
  10. Carefully remove the cheesecake from the tin, and remove the baking paper
  11. To serve, slice with a sharp knife, dipped in hot water to ensure a smooth edge
