Recipe: Gin & Tonic Pancakes

We've taken pancakes to the NEXT level this year by adding an extra Gin touch to them!

Ingredients

Pancake Mixture
- 200g Self Raising Flour
- 2 tbsp Caster Sugar
- 1 Egg
- 200ml Tonic
- 50ml Flavoured Gin (Cherry Bakewell/Lemon Drizzle)
- 200g Icing Sugar
- 50ml Flavoured Gin (Cherry Bakewell/Lemon Drizzle)
Method
- Add Self Raising Flour, Caster Sugar, Egg, Tonic and the Gin of your choice to a large bowl, then whisk together until mixture is fully combined
- Heat 1 tbsp of vegetable oil in a pan to medium and then pour into a ladle of pancake mixture, cook on each side for 1-2 minutes (the mixture should make around 8 pancakes)
- In a bowl combine icing sugar and the gin of your choice until smooth
- Pour over icing mixture and then decorate with cherries or lemon zest
- Enjoy!
