Using a simple cookie recipe, we've discovered if you sandwich ice cream in between two giant cookies you get a game-changing dessert!

Ingredients
- 440g brown sugar
- 400g caster sugar
- 480g butter (melted)
- 4 eggs
- 1 tbsp vanilla extract
- 640g plain flour
- 1 tsp baking powder
- 500g chocolate chips
Method
- Preheat the oven to 190?C / 375?F / Gas Mark 5.
- Whisk together brown sugar, white sugar and melted butter and mix.
- Mix in eggs and vanilla, follwed by flour and baking powder and mix together. Fold in the chocolate chips.
- Line a springform tin with greaseproof paper and use an ice cream scoop to add 9 scoops of the cookie dough and bake for 15-20 minutes - repeat this step for the second (top) layer.
- Once baked remove from the oven and leave to cool.
- Once cooled top the cookie with as much ice cream as you want to fit in between. Remove from the tin and top with the second giant cookie.
- Enjoy with friends!
