Recipe: Doritos Mac 'n' Cheese

Mac and Cheese is such brilliant comfort food... but when you add Doritos to the mix, your chances of enjoyment drastically go up!

Ingredients
- 225g Macaroni
- 3 tbsp Butter
- 2 tbsp Flour
- 1/4 tsp Pepper
- 1/4 tsp Salt
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Salt
- 1/8 tsp Paprika
- 500ml Whole Milk
- 125g Grated Cheddar Cheese
- 60g Grated Monterey Jack Cheese (Mexican Cheese)
- 60g Grated Mozzarella Cheese
- 1 handful Doritos
Method
- Preheat oven to 180° Celsius (350°F or Gas Mark 4)
- Melt 3 tbsp of butter in a large saucepan over low heat. Whisk in the flour, pepper, salt, garlic powder, pepper, onion salt and paprika, until well combined. Continue to whisk and cook for 2 minutes
- Gradually whisk in the milk. Increase the heat to medium and bring the mixture to a boil, whisking frequently
- Once the mixture comes to a boil, reduce the heat to low and allow it to simmer for 5 minutes, whisking frequently
- Stir the cheddar cheese, Monterey Jack cheese and mozzarella cheese into the saucepan
- Add the cooked macaroni to the cheese sauce and stir well to combine. Don't be tempted to eat that cheesy creaminess yet!
- Pour the mixture into a greased 1.5 quart/36cm baking dish and sprinkle cheese on top
- Sprinkle the crushed Doritos evenly over the top
- Bake for 20-25 minutes
- Remove from the oven and allow to cool for 3 minutes before serving
