Pancake Day with a Twist: Salted Caramel & Apple Pancakes

This will make an incredible end to Shrove Tuesday celebrations, with the richness of the salted caramel combining with the tartness of the apple – ahh, pancake day recipes do not get better than this! Make plenty – these pancakes will be demolished by the family in seconds!

Ingredients
- 1 large egg
- 115g self-raising flour
- 50ml semi-skimmed milk
- 60g caster sugar
- 1tsp baking powder
- 30g butter (softened)
- 1tsp of vanilla extract
- Salted caramel sauce
- 2 apples, peeled and chopped
- 1tbsp brown sugar
- 1tsp cinnamon
Method
- Mix the egg, milk and vanilla extract together in a bowl.
- Sift the flour, sugar and baking powder, before mixing the butter in by hand to form a fine crumbly consistency.
- Combine both mixtures and whisk to form a thick batter.
- Pour a small amount in the frying pan and cook for 1 minute or until bubbles form on the surface. Flip over and cook for the same time on the other side.
- For the apples, heat another pan to a medium heat. Add a small amount of butter as well as brown sugar and cinnamon.
- Leave for a minute until adding apples. Cook for 6 minutes or until tender.
- Serve with apples on top of stacked pancakes and a generous drizzle of salted caramel sauce.
