This will make an incredible end to Shrove Tuesday celebrations, with the richness of the salted caramel combining with the tartness of the apple – ahh, pancake day recipes do not get better than this! Make plenty – these pancakes will be demolished by the family in seconds!

Ingredients

  • 1 large egg
  • 115g self-raising flour
  • 50ml semi-skimmed milk
  • 60g caster sugar
  • 1tsp baking powder
  • 30g butter (softened)
  • 1tsp of vanilla extract
  • Salted caramel sauce
  • 2 apples, peeled and chopped
  • 1tbsp brown sugar
  • 1tsp cinnamon

Method

  1. Mix the egg, milk and vanilla extract together in a bowl.
  2. Sift the flour, sugar and baking powder, before mixing the butter in by hand to form a fine crumbly consistency.
  3. Combine both mixtures and whisk to form a thick batter.
  4. Pour a small amount in the frying pan and cook for 1 minute or until bubbles form on the surface. Flip over and cook for the same time on the other side.
  5. For the apples, heat another pan to a medium heat. Add a small amount of butter as well as brown sugar and cinnamon.
  6. Leave for a minute until adding apples. Cook for 6 minutes or until tender.
  7. Serve with apples on top of stacked pancakes and a generous drizzle of salted caramel sauce.
