Mini Egg Blondies

Get into the Easter spirit with these tasty Cadbury Mini Egg Blondies!
They're a brilliant bake for the weekend - and with those delicious mini eggs on top, they're perfect if you're fans of the sweet treat!

Ingredients
- 250g butter
- 150g mini chocolate eggs
- 150g light soft brown sugar
- 300g plain flour
- 125g caster sugar
- 2 large free-range eggs
- 1½ tsp vanilla extract
Method
- Preheat the oven to 180ºC.
- In a pan melt together the butter and both sugars, and keep over a gentle heat until it turns to a golden toffee colour.
- Set aside the butter/sugar mixture and in a mixing bowl whisk together the eggs and vanilla. Then slowly add into the butter and sugar mixture. Whisk vigorously until well combined and thickened.
- Sift in the flour and gently fold it in. Pour the batter into a square tin.
- Bake for around 20 minutes. Meanwhile, halve the mini eggs.
- Take the blondies out the oven and while still hot sprinkle over the mini egg halves.
