Little Vix's Unicorn Cupcakes

For the cake
- 150g soft butter
- 150g self-raising flour
- 150g caster sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 tbsp milk
- 1tsp baking powder (optional – helps mixture rise)
- 3 to 4 gel colours (yellow, pink, blue – or any colours of your choice)
- 50g butter
- 200g icing sugar (100g for buttercream, 100g for icing)
- 1 tsp water
- 3 to 4 gel colours (yellow, pink & blue – or any colours of your choice)
- Icing bags (1 per colour)
- Black fondant
- 2 x Silicone Unicorn Cupcake Moulds (6 cakes per mould)
Method
For the cake:
- Preheat oven to 180°C/350°F/Gas Mark 4
- Lightly spray a small amount of oil, using fingers on the inside of the cake moulds (this will help when it comes to removing the cakes later)
- Cream the sugar and butter together until pale and fluffy
- Beat the eggs in one at a time; add vanilla extract and milk, then mix together
- Sieve in flour and mix until all ingredients are combined
- Divide mixture into 3 bowls (or depending on how many colours you have)
- In bowl 1 – Add a small amount of yellow gel colour
- In bowl 2 – Add a small amount of pink gel colour
- In bowl 3 – Add a small amount of blue gel colour
- Mix colouring into each mixture after adding
- Divide the yellow gel colour between the 12 moulds. Repeat with the other mixtures in this order: yellow, pink, blue. Fill to about half of the mould
- Bake in a pre-heated oven for approximately 15 mins
- Remove cake moulds from the oven and leave to cool on a wire rack
- When completely cooled carefully remove cake from the mould.
For the decoration:
- Mix together 100g icing sugar and 1 tsp water until you get a thick consistency, add more icing sugar as needed
- Dip one side of each cake into the bowl of white icing so one side is coated. Repeat this for each one, leave aside until icing is dry
- For the hair, cream together the butter and icing sugar until you have a nice fluffy consistency
- Divide buttercream mixture into 3 bowls (or depending on how many colours you have)
- In bowl 1 – Add a small amount of yellow gel colour
- In bowl 2 – Add a small amount of pink gel colour
- In bowl 3 – Add a small amount of blue gel colour
- Mix colouring into each mixture after adding
- Cut out a small hole of the icing bag and divide each colour into a separate piping bag
- Create your unicorn hair in small streaks of each colour (have some fun with it – it doesn’t need to be perfect!)
- Using black fondant to create the fluttery eyelids and smile :)
