Hunter’s Chicken

This Hunter's Chicken recipe is perfect for 2 people to dine in on. Great for a quick, midweek meal.

Ingredients
- Olive oil as required
- Large chicken thighs (one per person)
- Bacon (2 rashers per person)
- Grated cheddar (20g per person)
- BBQ sauce (25ml per person)
Method
- Preheat your oven to 200°C.
- Rub oil across a baking tray.
- Place the chicken thighs on the tray.
- Cover the chicken with two rashers of bacon each.
- Place the tray in the oven and bake for 25 minutes.
- Carefully remove the tray from the oven and pour the BBQ sauce over each thigh.
- Add 20g of cheddar to the top of each thigh, then return them to the oven for 2 minutes.
Remove the hunter’s chicken from the oven, serve and enjoy!
