How to Make Easter Bunny Cakes

Ingredients

    For the cake
  • 173g butter or margarine
  • 173g caster sugar
  • 3 eggs, beaten
  • 173g self raising flour, sieved
  • 1 tsp Betty Winters Madagascan Vanilla Extract
  • 2 x 250g Betty Winters White Icing
  • 250g Betty Winters Black Icing
  • 1 tbsp milk
  • Strawberry jam
  • Dried Spaghetti
  • Pink sweeties
  • Caramel wafers
  • Boiled and then cooled water
For the buttercream
  • 50g unsalted butter
  • 100g icing sugar
Equipment
  • Rectangular roasting tin
  • Greaseproof paper
  • Rolling pin
  • 3" round cutter

Method

For the cake:

  1. Preheat oven to 180?C / 350?F / Gas Mark 4. Grease and line the baking tray with grease proof paper.
  2. Cream together the sugar and butter until light and fluffy.
  3. Add the egg a little at a time and mix well after each addition. Add one tablespoon of flour if the mixture begins to curdle. Add the vanilla extract.
  4. Gently fold in the flour until combined. Adjust the consistency of the batter with the milk then pour into a baking tray.
  5. Bake in the centre of the oven for 35mins or until the cake is well risen and spongy to touch.
  6. Remove the cake from the oven and cool on a wire rack.
  7. For the buttercream, add the softened butter and icing sugar to a mixing bowl and beat until fluffy.

For the decoration:

  1. Use the 3" round cutter to cut 6 rounds of sponge from the cake slab.
  2. Sandwich the two rounds of sponge together with jam. Mask the outside of the sponge with buttercream.
  3. On clean, dry surface knead all the Betty Winters Ready to Roll White Icing until soft and pliable. Split the icing into 3 equal portions one for each of the cakes. Dust the work surface with icing sugar and pin out the icing to 3-4 mm.
  4. Place the icing over the cake and smooth down with the palm of your hand. Trim away the excess icing from the base.
  5. To make the ears, use one caramel wafer biscuit and use the 3” round cutter to cut out two oval shapes. Using a half piece of spaghetti insert through the middle of the wafer.
  6. Using the remaining white icing pin out and cover one side of the ears. Attach the icing to wafer with a small amount of water. Shape the icing around the edge of the wafer with your finger. Pinch away any excess icing from the bottom of the ear
  7. Adjust the length of the spaghetti to the height of the cake and insert the ears.
  8. Attach a pink sweetie with a small amount of water for the nose and shape a small amount of Betty Winters Ready to Roll Black Icing for the eyes.
  9. Carefully transfer the bunny to your chosen display stand and marvel at your work of art!
