Guest Recipe: Wendy's Spanish Chicken Traybake

Spanish chicken traybake is a delicious, easy, healthy family meal you can throw together in no time!
Filled with the sunshine flavours of the Mediterranean and topped with tasty, juicy, succulent, chicken thighs. It’s a meal that doesn’t disappoint and guarantees empty plates every time!
You could serve the Spanish chicken traybake alongside a fresh green salad and some crusty bread for mopping up the juices. Or try serving with creamy mashed potatoes, pasta or rice. And when it comes to keeping the kids happy, serving with chunky oven chips and adding a side of garlic bread is always a good thing!

Ingredients
- 200g cherry tomatoes
- 3 peppers - red, yellow or orange
- 1 red onion
- 1 tbsp olive oil
- 2 cloves garlic
- 6-8 chicken thighs
- 2 tsp smoked paprika
- 1 tsp dried oregano
- Small bunch of flat leaf parsley
- Pinch of salt
- Pinch of black pepper
Method
- Preheat the oven to 200°C / 400F / Gas Mark 6
- Prepare the vegetables - slice the cherry tomatoes into halves, chop the peppers into chunky slices and slice the onion into wedges.
- Toss the vegetables in the olive oil and place into the roasting tray. Tuck the unpeeled garlic cloves amongst the vegetables.
- Next sprinkle the smoked paprika and oregano onto the chicken thighs then rest them on top of the vegetables in the roasting tray.
- Sprinkle over the salt and pepper.
- Cover the tray tightly with tin foil and place into the hot oven.
- Roast for around 30 minutes then remove the foil and continue cooking for around another 20 minutes or until the chicken is cooked through properly with no pink meat remaining and the juices running clear when knife inserted.
- Remove the cooked chicken traybake from the oven, squeeze the roasted garlic from the skins and stir into the roasted vegetables.
- Scatter over the chopped flat leaf parsley just before serving.
Add your own twist to the chicken traybake
- Fancy some extra meat? Try adding some chunky slices of chorizo sausage and cooking alongside the chicken.
- Like things spicy? Sprinkle over some red chilli flakes.
- Want to go meat free? Switch the chicken for slices of halloumi - roast the veg for 20 minutes then add the halloumi and continue to roast until the halloumi is browning.
- Like some more vegetables? Try adding in sliced courgettes, aubergines chunks or a handful of pitted olives.
