Ingredients
- 300g watermelon (see notes)
- 200g fresh strawberries
- 1 tsp freshly squeezed lime juice
- 1 tbsp honey
- 1 sprig fresh mint
Method
- Hull and halve the strawberries and add them to a blender.
- Add the watermelon, lime juice and honey and pulse until combined. Aim for a smooth consistency that’s neither too thick nor too runny. Don’t overdo it - it only takes around 10 seconds in a NutriBullet, but it could take a little longer in regular blenders.
- Pour the smoothie mixture into the glasses or baby watermelon, decorate with fresh mint leaves and add straws. Enjoy!
Notes
-
Watermelon: if serving your smoothie inside a baby watermelon, you can scoop out the flesh (an ice cream scoop is handy for this), weigh out 300g and refrigerate the remaining watermelon; if not, just use 300g of prepared or freshly cut chunks).

This recipe makes two 200ml glasses, which is also enough to fill a baby watermelon for an exotic sharing smoothie or simply a larger single serving.
