With trick-or-treating off the cards for this year, perhaps you’re thinking of throwing a small party for the family instead.

This spooky salmon blinis recipe is just the thing to serve up! Kids are bound to enjoy helping you make (and eat!) these creepy canapes and, as they’re packed with protein, they make for a rather healthy alternative to Halloween candy too!

Ingredients

  • 100g smoked salmon
  • 75g cream cheese
  • 15 ready-made blinis (yeasted pancakes)
  • 3-5 black olives, pitted
  • Fresh green pepper
  • 1-2 wedges fresh lemon, to serve (optional)

Method

  1. Place the blinis onto a chopping board and spread a little cream cheese over each one. You don’t need to use too much; just enough to ensure the smoked salmon will stay put.
  2. Using a 4cm cookie cutter, carefully cut circles out of the smoked salmon and then gently lift each circle on top of the blinis and press down gently to secure.
  3. Now, it’s time for the fiddly bit. Take the olives, cut them into halves and then cut small triangles out of them to form the pumpkins’ eyes and noses, before cutting out mouth-shapes pieces (go wild here - toothy grins, smiles, frowns, etc!)
  4. Next, take the green pepper and cut it into thin strips (around ½ a centimetre wide), before cutting them to around 1.5-2cm each in length. Then, carefully slide each strip of green pepper under the smoked salmon at the top of the pumpkins’ heads. Just wedge it in and make sure it’s held in place by the cream cheese.
  5. Serve your spooky salmon blinis with a wedge or two of fresh lemon (optional).
