Today Emily is going to show you how to create delicious, no-bake peanut butter bars, perfect for sharing with the whole family! These slices are delicious and easy to make, so great for making with kids.

This recipe is a delicious mix of cream, peanut butter and biscuit base. It makes around 8 slices, depending on how big you cut. I used a medium-sized lasagne dish around 3 inches deep, but you can use a thinner, wider dish. This is a no-bake dessert and doesn't have prep time, so you can enjoy your treat in just 30 minutes!

Alternatives To Try

If you don’t fancy peanut butter, you could try this recipe with biscuit spread or chocolate spread instead. Create the filling in the same way as before, but substitute it with different kinds of butter!

Digestive biscuits are great, and they can be used as the biscuit base in so many desserts. But if you want something even tastier, why not try a different biscuit. You can use Oreos for an even chocolatier treat or peanut biscuits to enhance the nutty flavour. What’s your favourite biscuit?

If you want an extra peanut butter flavour, you can chop up peanut butter candies and sprinkle them on the top. Reeces are great, and there are different types to choose from. You could also use chocolate covered peanuts or chunky peanut butter.

Ingredients

    For The Biscuit Base
  • 20 chocolate digestive biscuits
  • 100g butter
For The Peanut Butter Layer
  • 175g smooth peanut butter
  • 175g cream cheese
  • 50g icing sugar
  • A splash of double cream (use from the pot below!)
For The Cream Layer
  • 300ml double cream
  • Golden caster sugar to taste
  • 50g chocolate for melting
  • 50g peanut butter for melting
Equipment
  • A rolling pin
  • A sealable plastic lunch bag
  • An electric whisk
  • A few bowls
  • A serving tray
  • A microwave
  • A few spoons

Method

  1. In a large bowl melt your 100g of butter in the microwave until soft. It doesn't have to be completely melted but soft enough to mix into your biscuit base.
  2. Put your biscuits into a sealable plastic lunch bag and crush them until fine with a rolling pin. This part is great to get the kids involved as it's a lot of fun. You don't want any lumps. 
  3. Pour the fine biscuit crumbs into your butter bowl and mix until well combined. Once it's forming almost a dough, put it into your serving dish and press down. You want to create a cheesecake-like base. 
  4. Once you've covered the base of your dish, put it in the fridge to set while you make the other layers! 
  5. In another bowl, whisk together the 175g of peanut butter, cream cheese and icing sugar. From your 300ml of cream, you can add a splash into this mixture to make it creamier and not as thick. This part is to preference, but I used about one tbsp of cream. 
  6. Your mixture should look fluffy. Once combined, take out your biscuit layer from the fridge and spread the peanut later over the top. Make sure it is even across the dish!
  7. In a small glass bowl melt 50g of peanut butter in the microwave until runny. Melting should take about 30 seconds. If you need longer, take out the dish every 30 seconds to stir well and avoid burning. 
  8. Take a spoon and drizzle the melted peanut butter over the top of the peanut layer. You could also spread it out evenly, but I think a drizzle looks better! Make sure you drizzle across the whole dish and get the edges for an even spread.
  9. Whisk together your remaining cream and some golden caster sugar. Sweeten to taste, but I added around 10g as we like sweeter cream. Your cream should be thick and fluffy once whisked. 
  10. Spread the whipped cream evenly across the top of your dish. The easiest way to cover the whole dessert is to put a dollop of cream in each corner and spread. The corners are always forgotten about otherwise!
  11. Once your dessert is covered in cream, melt some chocolate in the microwave. Again, use 30-second intervals to avoid burning the cream. If you have more time, you could use the double boiler method.
  12. Use a spoon to drizzle the chocolate over the top in whatever pattern you like. You could also add chocolate chips for an extra crunch! 
  13. Once happy, pop in the fridge until you're ready to eat! This dessert is so easy to make and can be customised to personal tastes. Any dad would love this dish on Father's Day!
