Guest Recipe: Chikumo's Spinach and Tomato Pasta

This recipe is all about eating healthier while still enjoying your food and can be adapted whether you are vegan, vegetarian or a meat-eater.

Ingredients
- 1 large onion, diced
- 3 cloves of garlic, crushed
- 1 tin chopped tomatoes
- 180g spinach
- 2tsp chilli flakes
- 2 tbsp dried mixed herbs
- 2tbsp olive/rapeseed oil
- 1 Oxo cube (chicken/vegetable)
- Salt and pepper to taste
- 4 portions of spaghetti
- Chicken thigh/breast
- Parmesan cheese
Method
- Cook your spaghetti according to the pack’s instructions leaving half a cup of the spaghetti water to one side when draining.
- In a medium pan, add the olive oil on a medium heat.
- After 1 minute, add the onions and cook for 2 minutes or until the onions start to soften and stir occasionally.
- Add the garlic, chilli, herbs, salt and pepper to taste, and stir.
- Pour in the tin of tomatoes and stir occasionally for 2 minutes or until the mixture continuously bubbles.
- Add the spinach, oxo cube and the spaghetti water. Leave to simmer for 5 minutes whilst stirring occasionally or until the sauce starts to thicken.
- Once cooked, mix the spaghetti and sauce together and serve.
Optional – serve with one portion of chicken and/or parmesan cheese.
