Guest Recipe: Chikumo's Ghoulish Cupcakes

There is no better time to get creative in the kitchen than Halloween. Our ghoulish cupcakes are easy to make and the perfect excuse to trick or treat yourself!

Ingredients

For the cake batter
- 150g self-raising flour
- 50g cocoa
- 100g caster sugar
- 3 large eggs
- 200g soft unsalted butter
- 1tsp vanilla
- 12 cupcake cases
- 175g soft unsalted butter
- 400g icing sugar sifted
- 1tsp vanilla
- 6 Oreo’s
- 12 jumbo/normal chocolate chips
- 1 tube of white writing icing
- 1 piping bag
Method
Chocolate Cupcakes
- Preheat the oven to 200°C/180°C for fan-assisted ovens.
- Place the flour, cocoa, sugar, vanilla, butter and eggs into a bowl.
- Beat together with an electric whisk for 40 secs. Stop, scrape down the bowl and mix for a further 40 secs.
- Line a 12 holed cupcake tin with paper cases.
- Divide the batter between the 12 cupcake cases, filling three-quarters full. Bake for 10-12 mins until risen and when your skewer comes out clean.
- Transfer to a cooling rack and leaving to cool completely before decorating.
Buttercream
- Place the butter, icing and vanilla into a bowl.
- Beat together with an electric mix for 1 min. Stop, scrape down the bowl and mix for a further minute or until the buttercream is smooth.
- Place the buttercream into the piping bag and set to one side.
Decoration
- Using the white writing icing, write “R.I.P” on the Oreo’s and set to one side.
- Cut approximately 1cm up the piping bag to create a hole.
- Add the buttercream to the cupcakes in a circle motion going up.
- Place the decorated Oreo’s on top of 6 cupcakes.
- Place two chocolate chips on each of the remaining cupcakes.
