Guest Recipe: Anna's Delicious Apple Cake With Crumb Topping

Nothing beats the delicious taste of apple cake and the crunchiness of the crumb. Served as an irresistible dessert for Bonfire Night, it's sure to be a big hit with family, and will set the tone for an amazing autumn night.

Ingredients

For the apples
- 4 big apples cut in squares
- 1 tablespoon of brown sugar
- 1-2 tablespoons of butter
- 2 room temperature eggs
- 100 g white sugar
- 120 grams white flour
- 100 grams of room temperature butter + some more for the cake pan
- 1 teaspoon of baking powder
- 5 tablespoons of flour
- 3 big tablespoons of white sugar
- 3 big tablespoons of brown sugar
- 4-5 tablespoons of melted butter
- a pinch of salt
Method
- You should start by preparing the apples. Peel, then cut them in squares. Place them in a pan along with 1-2 tablespoon of butter and a tablespoon of brown sugar, and cook them on low heat until they soften. After they are done, let them cool until you prepare your cake mixture;
- Mix the sugar along with the room temperature butter until you get a cream consistency (about 10-15 minutes depending on your mixing speed);
- Add the eggs and mix until well combined;
- Add the baking powder and the flour and combine all of the ingredients;
- Now carefully add the apples into the cake mixture, and stir gently with a wooden spoon;
- You can now prepare the crumb by mixing the dry ingredients first then add the melted butter. Stir well with a tablespoon until everything is well combined;
- In a cake pan place a parchment paper then grease it with some butter all over;
- Preheat the oven at 185ºC;
- Put the mixture into the cake pan then add the crumble on top;
- Put it in the oven for 33-40 minutes until it passes the toothpick test (meaning that you should insert a toothpick in the cake and it should come out clean).
