Guest Recipe: Anna's Creamy Salmon & Zucchini Pasta

Who doesn't love pasta? Easy and quick to cook, pasta is a real crowd-pleaser for families of all sizes with busy schedules. And for anyone looking to reduce their meat in-take after a carnivorous Christmas, salmon makes for the perfect main ingredient.
Try Anna's recipe for a simple, quick and deliciously healthy meal: ideal for light lunches or dinners.

Ingredients
- 300 grams of penne pasta
- 1 large zucchini (chopped)
- 2 slices of raw salmon (cut)
- 1 small onion
- 3 garlic cloves
- 1 pack of cream cheese (you can use the light/low fat version)
- Salt and pepper
- A knob of butter (to grease the pan)
Method
- Fill a pot with water, add salt and pasta, and cook according to the instructions on the pack
- In a pan, put 2 teaspoons of butter along with the garlic and the onion and cook until golden brown on a medium-high heat
- Add the zucchini and cook for another 5-10 minutes until they soften. Make sure to stir gently from time to time with a wooden spoon
- Once the zucchini is done, put it aside on a plate
- Add again 2 teaspoons of butter in the same pan and add the salmon. Cook until it has a nice brown colour; 7 minutes should be enough
- By the time you finish with these steps your pasta should be cooked. Strain and place back in the pot
- Add the cooked zucchini and salmon to the pasta, as well as the cream cheese and stir together gently
- Add salt and pepper to taste.
