For those with a sweet tooth who want something delicious in no time at all. This is the ideal recipe for after-school snacking or dessert.

Nothing says comfort food like pancakes, so here’s a tasty and simple recipe to share with family or friends this Pancake Day. The texture is fluffy and bouncy, leaving you feeling full and content throughout the evening.

Pancakes are always fun because you can top them with everything and anything that make you happy. These sweet and scrumptious pancakes are topped with strawberries, a drizzle of honey, and chocolate chips that melt slowly, enticing you in.

Get everyone involved in the stirring, flipping, and most importantly eating. Yum!

Ingredients

    For American-Style Pancakes
  • 3 large eggs
  • A pinch of salt
  • 200g self-raising flour
  • 1 1/2 tbsp baking powder
  • 200ml milk
  • A knob of butter to place in the pan for cooking
  • Honey (for generously squeezing on top of the pancakes)
  • A handful of strawberries
  • Chocolate Chips

  • Frying pan
  • Measuring scales
  • Whisk
  • A tablespoon
  • Mixing bowl
  • Ladle
  • Spatula

Method

  1. Mix 200g self-raising flour with 1½ tbsp baking powder, 1tbsp golden caster sugar, and a pinch of salt into a mixing bowl.
  2. Create a well in the centre of your dry ingredients and then it’s time to add the wet ingredients. Crack in your 3 large eggs and 200ml of milk.
  3. Whisk all of the ingredients together for a couple of minutes until the batter just begins to look silky. It’s ok if there are a few bubbles present. Try not to overmix.
  4. Add a knob of butter to the pan, you want your pan to be quite hot! Once the butter begins to bubble, take the pan off the heat for 30 seconds. Then, place the pan back of the heat and ladle in a portion of the batter. Cook the pancakes on both sides for around 1-2 minutes. As you see the pancake start to bubble, begin to flip it over. Repeat the process until you come to the end of your batter.
  5. Plate up time! Dish your pancakes up into a stack and top them as desired. I went for a generous drizzle of honey (this seeps into the pancakes whilst they’re still hot - delicious), a handful of chopped strawberries, and a handful of chocolate chips.

 

To make the recipe gluten-free, replace the flour with gluten-free flour. You can also use plant-based butter and milk, as well as remove the eggs for a vegan pancake mix.
