Easy 'Bake Off' Bunting Cupcakes with Betty Winters Ready to Roll Icing

For the cupcakes
- 110g self-raising flour
- 100g caster sugar
- 110g butter
- 2 eggs
- 1tsp vanilla extract
- 2tbsp milk
- 250g Betty Winters Ready to Roll Icing - White
- 250g Betty Winters Ready to Roll Icing – Red
- 250g Betty Winters Ready to Roll Icing – Yellow
- 250g Betty Winters Ready to Roll Icing – Green
- 250g Betty Winters Ready to Roll Icing – Blue
- 250g Betty Winters Ready to Roll Icing – Black
- 250g Betty Winters Ready to Roll Icing - Pink
- Cooled boiled water
- Cooled boiled apricot jam
- Scissors
- Rolling pin
- Pastry brush
- Water brush
- Round cutter (3”)
- Icing sugar
- Small triangle cutter
Method
For the cupcakes:
- Pre-heat the oven to 180C/Gas 4
- Mix the butter and sugar in a bowl and then gradually beat in the eggs. Stir in vanilla extract.
- Add the self-raising flour, folding in with a large spoon. Add milk gradually until the mixture starts to 'drop'.
- Spoon mixture into lightly greased paper cases. Put them into a muffin tin and pop in the oven.
- Bake for 10-15 minutes until golden brown. Cool for 10 minutes.
For the decoration:
- Once cool, prepare the cupcakes by brushing over the surface with a thin layer of apricot jam.
- On a clean, dry surface knead each colour of Betty Winters Ready to Roll Icing separately until pliable.
- Dust the work surface with icing sugar and pin out the coloured icing of choice until 3-4mm thick.
- Cut circles using the circle cutter and place on top of the prepared cupcakes to cover.
- Pin out the icing again to 1-2mm thick and cut out several triangles of each colour.
- Place the triangles in alternate colours in a line across the middle of the cupcakes and attach with a small amount of water to create bunting.
- Lastly, roll the white icing into a very thin sausage and attach across the top of the bunting to create a string effect.
B&M Top Tip: If you don't have a triangle cutter, roll a long, thin strip of icing and trim the top, bottom and sides with a sharp knife to create straight edges. Cut across diagonally alternating left and right to create triangle shapes.
