Diabetic-Friendly Recipes: Sugar Free Chocolate Meringues

Ingredients
- 1 tbsp unsweetened cocoa powder
- 50g artificial sweetener (sucralose-based)
- 4 egg whites
- A pinch of cream of tartar, about 1/8 tsp
- 1 tsp vanilla extract
Method
- Turn the oven to 110°c and whisk the cocoa and sweetener together in a small bowl.
- Line a baking tray with greaseproof paper
- In a large mixing bowl, beat the egg whites and cream of tartar until foamy.
- Add the vanilla, and beat until stiff peaks form. (You could also do the upside-down-bowl-over-your-head trick. If they’re done they should stay in the bowl. If they’re not, you end up with egg whites all over your head!)
- Fold in the cocoa powder mixture until the whole thing is nicely blended.
- Position dollops of meringue – around a tablespoon size – onto the lined sheet and put in the oven for an hour.
- When they’re ready, take them out and leave them to cool fully on a wire tray before eating.
