Biscoff Millionaire's Shortbread

This Lotus Biscoff Millionaire's Shortbread is exactly what we needed to dribble over.
It's super simple to make, extra tasty to eat, and will definitely fill any sweet cravings you might have.

Ingredients
- 500g Biscoff Biscuits
- 115g Unsalted Butter
- 200g Unsalted Butter
- 3 tbsp Caster Sugar
- 4 tbsp Golden Syrup
- 397g Condensed Milk
- 250g Milk Chocolate
- 200g Biscoff Spread
- Biscoff Crumbs
Method
- Mix together 115g of the butter melted and mixed with 350g of the Biscoff biscuits, crushed. Spread into a square, linked tin and flatten. Chill in the fridge.
- Meanwhile empty the condensed milk, golden syrup, caster sugar and remaining butter into a pan and place over a low-medium heat. Stir constantly to avoid it sticking/burning on the bottom and continue until you have a thick soft fudge texture.
- Pour the caramel over the chilled biscuit base and return to the fridge.
- Melt together the chocolate and Biscoff spread, then pour over the chilled caramel. Roughly crush the remaining Biscoff biscuits over the melted chocolate. Chill again until fully set.
- Cut into squares and enjoy!
