Ingredients

  • 215g self-raising flour
  • 50g caster sugar
  • 70g butter (softened)
  • 4 tbsp milk
  • 1 egg

Method

  1. Preheat oven to 200°C/390°F/Gas Mark 6. Sift the flour into a bowl before adding the butter. Use your hands to mix until you have a breadcrumb-like mixture.
  2. Add caster sugar and stir.
  3. In a jug, crack the egg and add 3 tbsp of milk (keep some back) – then beat. Create a well in the middle of the crumb mixture and pour in the egg and milk, mixing together gradually. If you find the mixture is dry, add a bit of milk until you have a sticky dough.
  4. Flour a clean surface and roll out the dough into a round shape. Use cutters to cut out each scone. Re-roll the trimmings and carry on until you have used all of the dough.
  5. Line a baking tray with baking parchment and place your scones on evenly. Brush scones with milk and bake on the top shelf for 10 mins (or until golden brown).
  6. Once cool, slice in half and serve with clotted cream and jam!
