Ingredients
- 215g self-raising flour
- 50g caster sugar
- 70g butter (softened)
- 4 tbsp milk
- 1 egg
Method
- Preheat oven to 200°C/390°F/Gas Mark 6. Sift the flour into a bowl before adding the butter. Use your hands to mix until you have a breadcrumb-like mixture.
- Add caster sugar and stir.
- In a jug, crack the egg and add 3 tbsp of milk (keep some back) – then beat. Create a well in the middle of the crumb mixture and pour in the egg and milk, mixing together gradually. If you find the mixture is dry, add a bit of milk until you have a sticky dough.
- Flour a clean surface and roll out the dough into a round shape. Use cutters to cut out each scone. Re-roll the trimmings and carry on until you have used all of the dough.
- Line a baking tray with baking parchment and place your scones on evenly. Brush scones with milk and bake on the top shelf for 10 mins (or until golden brown).
- Once cool, slice in half and serve with clotted cream and jam!
