Ingredients
- 250g beef mince
- 1 large potato (diced)
- 1 onion (chopped)
- 2 garlic cloves
- 3 sprigs of thyme
- 500ml beef stock
- 1 tbsp plain flour (heaped)
- Pinch of salt and pepper
- 2 tbsp olive/vegetable oil
- 1 egg (beaten)
Method
- Preheat oven to 180°C/350°C/Gas Mark 4.
- Heat the oil in a large frying pan before adding the onions. Heat for 5 mins until soft and then add the mince, garlic and thyme – brown the mince.
- Add the potato and fry for a few minutes to soften. Add the flour and beef stock followed by a dash of salt and pepper. Leave to simmer for 20-25 mins.
- Roll out the ready to roll pastry and cut into 4 x 30cm circles (diameter). Spoon the filling into each circle, ensuring each filling is positioned on one side of the circle.
- Apply egg wash around the edges, fold and seal. Use any remaining egg on the top surface of each pasty.
- Place evenly on a baking tray covered with greaseproof paper – bake for 30 mins (or until golden brown).
