Homemade Ice Lolly Recipes For Summer

Temperatures are on the rise in the UK and even though us Brits love the sun, we’re more accustomed to cooler temperatures and cloudier skies.
In order to make the most out of the sunny weather and warmer days, having a delicious sweet treat that cools us down is crucial. But what happens if you’ve gone to the shops for some ice lollies and they’re all sold out? Or perhaps you’d like to try your hand at making some tasty treats for you and your loved ones?
Homemade ice lollies are a great accompaniment to hot summer days, and are much easier to make than you might think. There are so many different types of homemade ice lollies that will suit any preferences or needs you might have, and they can be so much fun to make!
To give you a helping hand, we’ve put together our five favourite homemade ice lollies recipes for you to try out.
Fruit Smoothie Homemade Ice Lollies Recipe
Embracing the taste of summer and a family favourite, our fruit lollies are milk-based and are the perfect opportunity to sneak some extra vitamins into your little ones’ diet.
Ingredients
- 200g fresh fruit
- 20g caster sugar
- 150ml milk (or coconut milk)
- 1tbsp honey
Method
Simply chop up your fresh fruit of choice (we love using strawberries and raspberries together) into halves.
Chuck the fruit into the blender or food processor, followed by the sugar, milk and honey. Blend until smooth and pour the mixture into an ice lolly mould. Then, add lolly sticks into your ice lolly moulds and freeze for six hours for a smoothie texture or overnight for a more solid lolly.
Don’t have a blender? Not to worry! You can easily mash up the fruit in a bowl and whisk in the other ingredients to create your milk ice lollies.
Jelly Homemade Ice Lollies Recipe
Kid-friendly and a great low-calorie frozen treat, our jelly homemade ice lollies are a fun twist on the classic dessert and are perfect for a summer’s day! They’re also easily adaptable for pickier palates.
Ingredients
- 1 packet of jelly
- 1 tin of fruit cocktail
Method
To begin, make the jelly as directed on the packet. We recommend adding in some ice cubes to chill the liquid faster, but if you’re looking for a better set homemade ice lolly, allow the jelly to partially set before moving onto the next step.
The next step involves draining the fruit from the can and adding the partially set jelly, which you’ll then pour into ice lolly moulds. Feel free to swap out the fruits for a summer fruits option.
Freeze overnight for best results, serve and enjoy!
Chocolate Dipped Homemade Ice Lollies
Who doesn’t love chocolate? Even on the hottest day of the year, it’s still a treat that we all love to enjoy, so we’ve got the perfect homemade ice lollies for the occasion.
Ingredients
- 300ml milk
- 20g caster sugar
- 1tsp vanilla extract
- Chocolate syrup
Method
To begin, whisk together your milk, caster sugar and vanilla extract until fully combined. Then, pour into your moulds and freeze overnight. Once fully frozen, pour your chocolate syrup into a tall glass and dip your ice lollies up to halfway and allow to set.
If you’re looking for a more indulgent chocolate treat, drizzle the set chocolate-dipped lollies with a white chocolate syrup.
‘Adult Fruit Juice’ Homemade Ice Lollies Recipe
Having a tipple in the sun is a great way to relax and enjoy the great weather, but if you’re needing a cooler option, we’ve got the perfect combination for you. Our ‘adult fruit juice’ homemade ice lollies are also great when made in ice cube trays to add into your drinks!
Ingredients
- 300ml fruit juice
- 200ml Hooch or WKD
- 50ml vodka (optional)
Method
Mix together your fruit juice (you can try orange juice if you don’t like tropical flavours) and alcopop of choice, and pour into ice lolly moulds. These ice lollies need longer freezing times due to the alcohol content, so we recommend freezing them for overnight or longer.
If you fancy a stronger drink, you can add 50ml of vodka or your favourite spirit, but be careful! Having too many of these ‘fruit juice’ lollies can leave you feeling a little tipsy.
Mojito Homemade Ice Lollies Recipe
These mojito homemade ice lollies are essential if you’re having guests round to kick back in the sun. Ditch the boring drinks with plain ice cubes and create the perfect combination of your favourite cocktail and the cooling effects of an ice lolly.
Ingredients
- 300ml lemonade
- 50ml vodka
- Splash of lime juice
- Pinch of fresh mint leaves
Method
Firstly, mash together your mint leaves and lime juice with some ice to create a slushy mixture. Then, simply pour in your lemonade and vodka and thoroughly combine the mixture together.
Then, pour into your ice lolly moulds or your ice cube trays and freeze overnight. Due to the alcohol, we recommend freezing them for longer so the ice pops right out, preferably overnight.
